Premium Quality Dried Shrimp Seafood

Small shrimp, dried until they are firm and deeply coloured — a warm orange-red, slightly curled, with the shell still on. They keep well and carry a concentrated, savoury, faintly briny flavour that fresh shrimp do not have.

They are an ingredient rather than a dish. Soak them briefly to soften, then chop and fry them into XO sauce, scatter them into soups, congee and stir-fries, or pound them into seasonings and dipping sauces. A handful goes a long way.
