Fresh Prepared Razor Clam Meat

Razor clam meat, already removed from the long brittle shell. Each piece is an elongated, fleshy strip with a pale, translucent foot at one end and a darker, browner mass along the other.

The texture is firm and slightly chewy with a clean, sweet, briny flavour. Slice it and serve cold with a little soy and sesame, drop it into a hot broth at the table, or stir-fry it quickly with ginger and scallion — it tightens if it is overcooked, so keep the heat brief.

• Shelled razor clam meat, elongated strips

• Firm, slightly chewy, sweet and briny
• Serve cold, in broth, or stir-fried briefly

Keep frozen at -18°C or below. Thaw in the refrigerator and cook thoroughly before eating.
