Frozen Cooked Arctic Sweet Shrimp

Cooked cold-water sweet shrimp, served whole with the shell on and the head removed. They are a bright orange-red with pale banding, and many carry a dense cluster of fine green-black roe along the underside of the belly.

The meat is sweet and slightly firm, closer to lobster than to a warm-water prawn, and the roe is rich and faintly briny. Eat them chilled as they are, lay them over sushi rice, or fold them through a seafood salad. Thaw slowly in the refrigerator to keep the texture.

Keep frozen at -18°C or below. Thaw in the refrigerator and eat the same day.
